I grew up in a household that prioritized garden-fresh produce and home-baking. My dad always had a huge garden, and my mom would put up quarts of applesauce, tomatoes, and peaches in the basement every summer. If we were fortunate enough to have dessert, the pie crust was homemade with real butter, and the cookies were full of oatmeal and chocolate chips. As an adult, I was shocked to realize how much "non-food" is in most convenience products and restaurant fare. The modern American food industry prioritizes shelf-stability and inexpensive production, and as such, items are full of preservatives, flavorings, and highly-processed ingredients. Most of these ingredients our bodies don't recognize as "food" and therefore don't know how to get rid of them. These toxins can build up in our systems and contribute to weight gain, emotional regulation difficulties, and hyperactivity.
Like many, I came to realize the need for gluten-free baking as an adult. My husband is gluten-sensitive and comes from a family of diagnosed celiacs. The commercal gluten-free items available in the grocery store are the worst offenders when it comes to modified, unhealthy ingredients! And they taste terrible! I realized early on that unless I was committed to baking two of everything (and who has time for that?), that I was going to need to find a way to bake gluten-free items that tasted just as good as the ones I could bake that were gluten-filled. Thanks to the pioneering work done by some gluten-free bakers before me (Annalise Roberts, America's Test Kitchen, among others) I've been able to develop an extensive knowledge of the unique properties of gluten-free flours and how to combine them into something truly delicious that all people (whether they need to be gluten-free or not!) will enjoy.
Perhaps you are gluten-free for health reasons and have despaired that you can never indulge in a truly soft, gooey cinnamon roll again. Perhaps you feel like all of the commercially available gluten-free products just aren't worth the calories and the preservatives! Whatever your reason in seeking out a better alternative, I hope that the products that I make can nourish your body and soul and bring you joy!

We do occasionally have prepared gluten-containing products (such as cereal and prepared bread) in our home, but all baking equipment is dedicated to gluten-free use. Any gluten-containing products and the toaster are removed from the kitchen when preparing customer orders.
